Entertaining: Easy Appetizers – Citrus-Marinated Olives

A bowl of plump and glossy marinated olives is hands-down one of my favorite hospitality gestures. And, this primo party food, perfect with wine or cocktails, couldn’t be easier to throw together. Sure, you could scoop up some already-flavored ones from your local market, but once you’ve made your own, you’ll wonder why you ever bothered with the store-bought kind. Although these gorgeous little nibbles are great cold or at room temperature, what really makes them sing is warming the olives in the oven for a few minutes to marry the flavors. Set out a bowl (and include a small bowl on the side for the discarded pits, too) while you mingle with your guests and watch them disappear. Packed in jars and tied with a pretty ribbon, they also make a lovely hostess gift.

Here’s how:

In a bowl, toss together:

  • 12 ounces mixed gourmet olives
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons minced garlic
  • 1-1/2 teaspoons crushed red pepper flakes
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • zest of 1 orange
  • zest of 1 lemon

Season to taste with kosher salt and freshly ground black pepper; wrap tightly in aluminum foil. Bake at 350 degrees for 15 minutes and serve.

    So easy to make and eat. My challenge would be to go easy on the eating part. I can think of several friends that would love a jar of these.

    Olives are a bit intimidating for me. I guess it’s the briny taste; however, I can imagine a more complex and brightened taste with the addition of lemon and orange zest plus rosemary. Brilliant! I appreciate these ideas for the holidays!
