The Stock Pot: Sensational Sides – Balsamic-Roasted Tomatoes

Roasting tomatoes at a high temperature brings out their natural sweetness and does wonders for those flavorless Roma tomatoes available year-round at the supermarket. A splash of good balsamic vinegar transforms the produce staple, giving them robust flavor that rivals their vine-ripened summer counterparts.

Ingredients
  • ¼ cup extra-virgin olive oil
  • 2 pounds ripe Roma or plum tomatoes (about 8 to 10, depending on size)
  • 2 tablespoons aged balsamic vinegar
  • Kosher salt and freshly ground black pepper
  • Garlic powder
  • 1 tablespoon chopped fresh oregano, thyme, basil or parsley

Instructions
  1. Preheat the oven to 450 degrees. Brush a large rimmed baking sheet with some of the oil. Cut the tomatoes in half lengthwise. Arrange the tomatoes cut-side up in a single layer on the baking sheet. Drizzle over the olive oil and vinegar and season with salt, pepper and a little garlic powder. Roast the tomatoes until they are tender and lightly browned, about 30 minutes.
  2. Sprinkle over the herbs and serve warm or at room temperature.

Planning: The tomatoes are delicious with roast chicken or a juicy steak. They’re also a great addition to a sandwich or burger or tossed with some pasta.

Product Purity: From Italy comes the exquisite balsamic vinegar. Made from white Trebbiano grapes, the vinegar continues to get its rich color from a lengthy period of aging in barrels of various woods. A quality bottle of balsamic is a must for all pantries for its wonderful flavor to add to all sorts of savory dishes.
Presentation: As for the herb garnish, I usually lean towards Italian flat-leaf parsley with these delicious tomatoes.
